Vietnamese spring roll 
is a 2-steps preparation. Kids will have fun rolling the fresh strips of vegetables in rice paper, served with peanut butter sauce.  

'Eat a rainbow' would mean taking in a variety of nutrients.
Blue rice is white rice cooked with blue ternate flowers containing antioxidants beneficial to blood circulation, eyes, hair, and skin.
